Curried Chicken Pasta & Vegetable Salad

Some days, all I want is something that tastes different from my usual choices. Today, I wanted something that would be quick, easy, and different. So I decided to create my own unique dish, curried chicken breast with pasta, served with a vegetable salad. It's my pleasure to share it with you. I am not a professional cook, but I enjoy making my own dishes and sharing them with you.

Ingredients


Curried Chicken Pasta & Vegetable Salad

Macaroni (swiss shells & bow tie)

Chicken Breast (2 cuts)

Cheese

Onion

Mixed Vegetables

Tomato

Frankfurters

Garlic

Salt

Coconut Oil

Curry

Spring Onion


Vegetable Salad

Lettuce

Cucumber

Ranch Dressing





Instructions

Bring water to boil, add salt and tups of oil. When it is boiling fully, add the macaroni and leave it to cook. Do not cover the pot. It should be cooked in about 10-15 minutes.


Wash and chop/dice the chicken breast into small pieces, and add your desired seasoning and salt. You may leave it for a few minutes to marinate. Put a saucepan on the stove and add coconut oil 9pot must be dry). When the oil is hot, add the curry and stir it for about 20 seconds so it is evenly distributed. Add the chunks of chicken breast that were seasoned and the garlic (crushed). When that is sufficiently crisp, add the mixed vegetables and onion. Stir fry for about five minutes or until you are satisfied.


Drain the water from the macaroni/pasta and incorporate the chicken breast. Fold in until combined. Grease your baking pan then add the pasta-chicken combination. Finally, dice the tomato and the spring onion and distribute them evenly on the top of the pasta. Add the cheese also evenly to the top of the pasta. Bake for about 15 minutes. Serve and enjoy!
