Here's how I made this curry shrimp mashed potato dinner:
Curry Shrimp Mashed Potato Dinner Ingredients
Curry Shrimp
Shrimp
Salt
Curry Powder
Chili Pepper Paste
Coconut Oil
Coconut Milk
Fire Roasted Peppers & Onions
Water
Black Pepper
Fiesta Lime Seasoning
Italian Blend Seasoning
Instructions: Put a saucepan on the stove and add avocado oil. When the oil gets hot, add the curry powder and mix it into the oil so that it is evenly distributed. Add the shrimp (season the shrimp with the seasoning and salt before and let it marinate before adding it to the oil) to the hot oil and stir so that it doesn't get burnt. Leave it to cook for a while, then add the chili pepper paste. Mix this until it dissolves. Then add the fire-roasted peppers and onions. I also added a small amount of pre-cooked broccoli and carrots to mine. Let that cook for a little then add water (amount based on how much shrimp you're cooking). Cook until your desired taste is achieved.
