Step 1: Gather Your Ingredients

  • For the crust:

- 2 cups of all-purpose flour

- 1/4 cup of unsalted butter (softened)

- 3/4 cup of sugar

- 1/2 teaspoon of salt

- 1/4 cup of cold water (use as needed)


  • For the coconut filling:

- 2 cups of grated fresh coconut (approximately 1 medium coconut)

- 3/4 cup of sugar

- 1 teaspoon of vanilla flavor (or extract)  - 1 teaspoon of cinnamon

- A pinch of nutmeg

 - 1 tablespoon of ginger

 - 1 teaspoon of honey

 - Water (where needed)


After you’ve gathered everything, you’re all set to get creative!


Step 2: Make the Dough


In your mixer or a large mixing bowl, combine the flour, butter, and salt. Cut in the softened butter until the mixture resembles breadcrumbs, which should take about 5 minutes of mixing. Next, add the cold water gradually. Mix until it forms a smooth dough. Once you have the right texture, wrap the dough in plastic wrap and refrigerate for at least 30 minutes. This step is crucial; it helps the dough become flaky and delicious!



Step 3: Prepare the Coconut Filling

To blend, chop into small pieces, and blend with as little water as possible and only for as long as needed. In a pan over low to medium heat, combine the grated or blended coconut, sugar, honey, vanilla extract, cinnamon, and nutmeg. Stir until fully combined; at this point, you can almost taste the flavors melding together. This mixture not only tastes amazing but fills your kitchen with an incredible aroma. Cook for about 15-25 minutes or until the liquid is dried our and the mixture is to your liking.


Step 4: Shape the Gizzadas


Once the dough is chilled, roll it out on a floured surface to about 1/8 inch thick. Use a round cutter or a glass to cut out circles based on your preference. Place these circles on a greased baking tray. Next, spoon about 1 tablespoon (or as much as you like) of the coconut filling onto the center of each circle. Preheat your oven to 350°F (175°C). Bake the gizzadas for 20-25 minutes, or until they are golden brown. As they bake, your kitchen will be filled with a sweet coconut fragrance.
