Sweet Potato Milk Pudding

This is a super simple easy-to-make recipe for anyone with or without baking experience. This yummy sweet potato milk pudding has no sugar but you won't miss it. Give it a try and let me know if you like it.

Sweet Potato Milk Pudding Recipe



Ingredients for a Small Pudding

  1. 1 Small Potato (Washed, Peeled and Chopped)

  2. 1 Tbsp. Coconut Oil

  3. 1 Tbsp. Butter

  4. 1/4 Cup Grated Coconut (amount based on preference)

  5. 1 Cup Sweetened Condensed Milk

  6. 1/2 Cup Cornmeal (refined)

  7. 1/4 Cup All-Purpose Flour

  8. 1 Tsp. Cinnamon (to your taste)

  9. 1 Tsp. Vanilla Flavor

  10. 1 Tbsp. Ginger (blended)

  11. 1/4 Cup Water (filtered)





Instructions on how I do it:


First, dehusk and chop your coconut and add them to the blender with the oil, vanilla, sweet condensed milk (half the amount), ginger, water (use only half of it at this point), and cinnamon. Blend until smooth (as smooth as possible). Then add sweet potato (washed and chopped). Blend until you achieve your desired texture.


Pour the blended mixture into a deep dish or container. Add the flour, cornmeal, the rest of the remainder of the milk, then mix them and use the remaining water gradually to mix it all in. Add the butter last, and mix it into the mixture.


Bake for about 35-45 minutes.
